Pumpkin Pecan Bread with Chocolate Swirl

There’s just something about this weather; ️ how it’s sunny, but there’s still a windchill,the beautiful colors on the trees and just the way it smells outside! I LOVE going for walks around the neighborhood with my love, enjoying everyone’s decor.  So, long story short: I’ve got the baking bug & a 🏼 BWB’s 🏼craving for PUMPKIN! (&chocolate &pecan pie) — Pumpkin Pecan Bread  with a #dairyfree Chocolate Swirl.  Made with fresh ground Pecan Butter (never tried it & it’s AMAZING!) #FallForDesserts  As most of my baked goods are, this is: #glutenfree #grainfree #wheatfree #paleo

1 C brown rice flour
1/2 tsp baking powder
1/4 tsp baking soda
1 packet unflavored gelatin
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1/4 tsp apple pie spice
1/3 C brown sugar
pinch of sea salt
3/4 C organic pumpkin puree
2 whole eggs
2 egg whites
1 Tbs raw honey
1 tsp blackstrap molasses
1/2 tsp vanilla extract
1 Tbs melted coconut oil
1/3 C dairy free chocolate chips (to be melted)
1/2 Tbs coconut oil (to help the melted chocolate be more smooth)
4 Tbs Fresh ground Pecan Butter (raw pecans processed in high-speed blender)
1/3 C crushed pecans for topping
— Preheat oven to 350
–Line bread pan with parchment paper. (Since I was out, i just oiled the pan with coconut oil and then dusted it with a little flour)
— Mix the dry ingredients. Then mix the wet ingredients. Now combine and mix with a handheld mixer until batter-like consistency forms. (I added a couple splashes of almond milk after to thin it out a little bit).
–Pour batter in to pan and bang on counter to eliminate air bubbles.
–Drizzle melted chocolate chips on top and swirl around with a knife.
–Drop chunks of pecan butter.
–Sprinkle pecans on top.
— Bake for 45 mins

Blueberry-Coconut Crumble Bites

1/2 C Apple sauce
2 Tbs coconut oil, melted
4 flax ‘eggs’
2 tsp ACV
2 tsp vanilla extract
1/3 C maple syrup
2/3 C coconut flour
2-3 Tbs brown rice flour
1/4 tsp baking soda
1/4 tsp baking powder
Dash of cinnamon
Dash of sea salt
1/2 C fresh or frozen blueberries (I used frozen)

💙Preheat oven to 350f.
💙Mix the dry ingredients INTO the wet ingredients.
💙Then mix in the blueberries.
💙Line a greased muffin/cupcake tin and bake for roughly 20 mins.
💙Texture will be moist and soft.

Vanilla Coconut Protein Pancakes

November is Peanut Butter Lover’s Month 🌰❤️🌰 You’re welcome for the gooey #peanutbutterporn 💋 These were Coconut 🍈#proteinpancakes gone wrong 🙈 (or should I say right?! 🙉) they were amazing!!!! Even though they weren’t as fluffy as my usual #porncakes , they were moist, sweet, and oh so filling 💕🍴 Drizzled with a coconut-vanilla protein sauce & mixed berry chia compote. Im absolutely LOVING Jamie Eason’s Natural Vanilla Whey Isolate http://www.labrada.com/store/wheyisolateforher.html  👌 It’s the perfect subtle sweetness, so I don’t even need to add extra sweeteners like stevia or honey 🍯 I highly recommend you check it out!

1/4 C almond flour
1 Tbs coconut flour
1 Tbs coconut POWDER (coconut shreds, processed in to a powder)
1/2 scoop @leanbodyforher vanilla protein powder
1/2 tsp baking powder
Dash of cinnamon
2 egg whites
1/2 tsp vanilla
1 Tbs mashed banana

➡️ Mix the dry ingredients. Then mix the wet ingredients. Then combine them. You can add splashes of almond milk (to reach desired consistency).
➡️Cook on a pan with coconut oil. {When I make them, they don’t “bubble up” as much as regular pancakes signifying to flip them…BUT they still bubble a tiny bit so watch your heat setting and check the bottom with your spatula.}
➡️ For protein sauce: Mix 1/2 scoop @leanbodyforher vanilla protein powder, 1/2 Tbs coconut powder, splashes of almond milk.
➡️ Mixed berry chia compote: in a sauce pan, mix: Frozen blueberries, strawberries, raspberries with vanilla extract and splashes of water + 1/2 Tbs chia seeds.

Blueberry-Pumpkin & Trail Mix Pancakes

1/2 tsp baking powder
Dash of cinnamon, ginger, & pumpkin pie spice
1 packet of stevia
1 egg
1 egg white
1/2 tsp vanilla
Very generous 1/4 C pumpkin purée

Chocolate Pumpkin Oatmeal Whoopie Pie

You’re in for a real treat with this recipe. It was soooooo delicious! Super high in protein too, so it keeps you fuller longer and energized. Got me through an awesome leg workout! With extra energy to spare and I was STILL full!

In a bowl, mix:

1/2 C quick cooking oats
1/2 scoop vanilla protein powder
2 tbsp of egg whites (1 white & 1 full egg)
Dash of cinnamon (to your own taste, but I LOVE my cinnamon)
Dash of dried ginger (optional, but really tasty)
1/2 tbsp of ground flaxseeds & chia seeds (optional, only if you have them)
1 Tbs raw cacao powder
1/2 C spinach (rip with hands to smaller peices)

Heat a pan on medium/high heat with some coconut oil or olive oil and pour the “batter” on to it shaping in to a round pancake. Cook the “batter” like a pancake approx. 3 mins on the first side then flip and cook 2 minutes on the other. (Or until it’s “crispy” enough for you)
–repeat with second cake
— Mix
1/4 C pumpkin purée 1/4 C Apple sauce and 2 Tbs vanilla protein powder
–stuff whoopie pie and top with peanut butter and chocolate sauces from my Chai & Pumpkin Spice Bread

Egg White Oats

Simple and to the point 👌👌 Im OBSESSED with egg white oats. They’re heavenly fluffy and so high I’m protein. Great start to anyone’s day 👍

1/2 C dry oats
1 C almond milk
1 tsp cinnamon
1/2 scoop protein powder
1/2 tsp ginger
1 tsp chia seeds & flax meal

— stir on low heat until ALMOST cooked.
–Then crack 2 egg whites in and stir RAPIDLY until well combined
–Top with whatever your heart desires.

Chocolate Cherry Dump Cake Pancakes

Loving the deep colors and rich flavors that Fall has to offer 🍂💜🍃 Here’s my take on a desert called “Chocolate Cherry Dump Cake” 🍫🍒 but in pancake form 👌 Rich, raw cacao #porncakes spread with raw #superfood #baobab , coconut oil & pulsed coconut shreds “frosting” 🍈 drizzled with a sweet cherry and Goji Berry compote 🍒🍯 #dessertforbreakfast #justhowilikeit

1/4 C almond flour
2 Tbs coconut flour
1/2 scoop chocolate protein powder
1/2 tsp baking powder
1 Tbs cacao powder
Dash of ginger
Dash of cinnamon
1 egg
1egg white
1/2 tsp vanilla
1 Tbs apple sauce
1 Tbs Greek yogurt

Raw Baobab & Coconut Frosting
In a high powered blender, blend: unsweetened coconut shreds, baobab powder, and coconut oil. (Unsure of measurements, I just eyeballed it till I reached my desired consistency)

➡️ Mix the dry ingredients. Then mix the wet ingredients. Then combine them.
➡️You can add splashes of almond milk (to reach desired consistency). ➡️Cook on a pan with coconut oil.
➡️ Topped with a melted cherry compote and pecans

Chocolate Peanut Butter Pumpkin Pie French Toast

It’s the first day of October 🍃👻💜💀🍂 that means, #AllPumpkinEverything baby!🎃 I’ve had #pumpkinpie on my mind lately 👅💦, so what better way to conquer my craving than making my own version 👌😎 Chocolate -Peanut Butter -Pumpkin Pie -French Toast 🍞🎃 #50shadesofpumpkin –🍫🌰 drizzled with raw cacao and peanut flour sauces, topped with none other than a heaping mound of crunchy PB #dairyfree #highprotein 💋

1 egg
1 egg white
1 tsp cinnamon, vanilla, ginger
Splash of almond milk
1 tbs any type of protein powder
–Mix and soak two pieces of bread of choice. I used @daves_killer_bread
— Cool on heated pan with coconut oil

1/2 C pumpkin puree
2 tbs protein powder
2 tsp Pumpkin pie spice
–mix together and microwave 30 seconds

1/4 dairy & soy free chocolate chips
1/2 tsp raw cacao
1 tbs almond milk
–microwave until chocolate sauce forms

Stack your toasts and layer with coined bananas, pumpkin mixture, and you’re PB and chocolate sauces
