Blueberry-Pumpkin & Trail Mix Pancakes

I love not having to wake up to an alarm ⏰ or worry about somewhere I have to be 😌 It’s my lazy #pancakesunday and I’m going to enjoy it 💕🍴 More #pumpkinporn for y’all with Blueberry-Pumpkin 💙🎃#porncakes sprinkled with both homemade: honey-oat clusters 🍯 and Trail mix 🌰🍌🎃🍈🍓

Melted inside are some succulent & sweet Wild Boreal Blueberries 💙

1/4 C almond flour
1/2 scoop protein powder of your choice
1/2 tsp baking powder
Dash of cinnamon, ginger, & pumpkin pie spice
1 packet of stevia
1 egg
1 egg white
1/2 tsp vanilla
Very generous 1/4 C pumpkin purée
1 Tbs Mashed banana

➡️ Mix the dry ingredients. Then mix the wet ingredients. Then combine them. You can add splashes of almond milk (to reach desired consistency). Cook on a pan with coconut oil. When I make them, they don’t “bubble up” as much as regular pancakes signifying to flip them…BUT they still bubble a tiny bit so watch your heat setting and check the bottom with your spatula.
